Rajma


Rajma or red kidney beans is extensively used in Indian cooking. In northern India, a very common way to eat these beans is in a spicy curry with hot rice or rotis. A huge comfort food, I would make this very often when I was a student with canned kidney beans - very quick and satisfying, this is a no-fail recipe!

Rajma

1 can (15 oz) Kidney Beans (if using dried beans, soak the beans overnight and cook in water until done)
2-3 Green Chillies, slit lengthwise
1 Onion, diced
2-3 cloves Garlic, chopped
1" piece of Ginger, minced
3 Tomatoes, chopped
1 pinch Turmeric
1 tbsp Garam Masala
1 pinch Amchur Powder (optional - found in most Indian stores as dried Mango powder)

Grind the ginger and garlic together with a little bit of water and keep aside. Grind the tomatoes and keep aside.

Heat about 2 tbsp of oil in a saucepan. Add the onions and saute very well until browned. Add the salt, turmeric, ginger and garlic paste and garam masala and continue sauteing until it begins to smell fragrant (about 2-3 minutes).

Add the cooked beans with 2 cups of warm water. Keep stirring and squashing the beans a little bit. Continue to stir until the curry thickens (about 7-8 minutes).

Add the tomato paste and amchur powder and let the curry come to a boil. Lower the heat to Low and allow to simmer for 7-8 minutes, until the curry thickens.


Serve warm with hot rice or rotis.

Hi Arundathi!

We (Drew and I) are so excited about the Taste & Create challenge. Your blog is lovely--we have really enjoyed perusing it in search of what to make--too many delicious options. My friend, The Official Taste Tester, is thrilled that we're going to do one of your more traditional Indian recipes--she lived in London for a year and misses the Indian food so much. We only have one Indian restaurant here in Jackson so we don't know much about Indian cuisine (I mean, I know it varies a lot by the region, but we don't even know the basics), but we are excited all the same--or maybe all the more so because it's new.

I felt terrible for you when I saw you got paired with us, because I saw that you're a vegetarian and I know we don't have a lot of veggie-friendly recipes! I hope it's okay.

One thing--I think we're going to make this Rajma Chawal recipe, and I wanted to know what type of green chiles you mean. We can get jalapenos, Anaheim peppers, bell peppers, habaneros, banana peppers, and chiles in adobo. What would you suggest using?

Oh, and I love your other blog, too--you make me want to visit Chennai so badly. You are an excellent ambassador for your town and country!

Indian chillies are slightly different from all those mentioned - they're thin, very spicy and kinda long. I guess the jalapenos would come closest to that.

I'm so glad someone in Jackson is making Indian food from my blog! very cool! I hope Drew enjoys it too. And you are very welcome to visit Chennai anytime!
