Dipu's Chocolate Chip Cookies

My friend gave me this recipe ages ago and I should have tried it sooner, because these are some of the best cookies I've ever made.

It was easy. My kids did most of the work! And they did most of the eating too!!

Dipu's Chocolate Chip Cookies
(makes about 4 dozen small cookies or 2 dozen regular cookies - mine here are the small version!)

1 cup White Sugar
1 cup Brown Sugar
3 cups All-Purpose Flour
2 cups Semi-Sweet Chocolate Chips
1 cup Walnuts, chopped
1 cup Butter, softened
2 Eggs
2 tsp Vanilla Extract
2 tsp Hot Water
1 tsp Baking Soda
1/2 tsp Salt

Preheat oven to 175 deg C.

Cream together the butter and sugars until smooth. Beat in eggs one at a time, then stir in the vanilla.

Dissolve baking soda in hot water. Add to batter along with salt. Stir in flour, chocolate chips and nuts. Drop by large spoonfuls onto ungreased pans.

Bake for about 10 minutes in the preheated oven, or until edges are nicely browned.

Mallows and Milanos

I'm not a huge fan of marshmallows. So when I saw this challenge from the Daring Bakers, making mallows or marshmallows on cookies dipped in chocolate, I was kinda sorta skeptical. But I've always loved the Pepperidge Farm Milanos, and I was excited I was going to be making those at home. Frankly, I never thought I'd see the day when I was making either of these at home!!

The July Daring Bakers' challenge was hosted by Nicole at Sweet Tooth. She chose Chocolate Covered Marshmallow Cookies and Milan cookies from pastry chef Gale Gand of the Food Network.

Mallows (Chocolate Covered Marshmallow Cookies)
Recipe courtesy Gale Gand, from Food Network website

Serves: about 2 dozen cookies

3 cups (375grams/13.23oz) all purpose flour
1/2 cup (112.5grams/3.97oz) white sugar
1/2 teaspoon salt
3/4 teaspoon baking powder
3/8 teaspoon baking soda
1/2 teaspoon ground cinnamon
12 tablespoons (170grams/ 6 oz) unsalted butter
3 eggs, whisked together
Homemade marshmallows, recipe follows
Chocolate glaze, recipe follows

In a mixer with the paddle attachment, blend the dry ingredients. On low speed, add the butter and mix until sandy. Add the eggs and mix until combine. Form the dough into a disk, wrap with clingfilm or parchment and refrigerate at least 1 hour and up to 3 days.

When ready to bake, grease a cookie sheet or line it with parchment paper or a silicon mat. Preheat the oven to 375 degrees F.

Roll out the dough to 1/8-inch thickness, on a lightly floured surface. Use a 1 to 1 1/2 inches cookie cutter to cut out small rounds of dough. Transfer to the prepared pan and bake for 10 minutes or until light golden brown. Let cool to room temperature.

Pipe a “kiss” of marshmallow onto each cookie. Let set at room temperature for 2 hours.

Line a cookie sheet with parchment or silicon mat. One at a time, gently drop the marshmallow-topped cookies into the hot chocolate glaze. Lift out with a fork and let excess chocolate drip back into the bowl.

Place on the prepared pan and let set at room temperature until the coating is firm, about 1 to 2 hours.

Note: if you don’t want to make your own marshmallows, you can cut a large marshmallow in half and place on the cookie base. Heat in a preheated 350-degree oven to slump the marshmallow slightly, it will expand and brown a little. Let cool, then proceed with the chocolate dipping.

Homemade marshmallows:
1/4 cup water
1/4 cup light corn syrup

3/4 cup (168.76 grams/5.95oz) sugar
1 tablespoon powdered gelatin
2 tablespoons cold water
2 egg whites , room temperature
1/4 teaspoon pure vanilla extract

In a saucepan, combine the water, corn syrup, and sugar, bring to a boil until “soft-ball” stage, or 235 degrees on a candy thermometer. Sprinkle the gelatin over the cold water and let dissolve.

Remove the syrup from the heat, add the gelatin, and mix. Whip the whites until soft peaks form and pour the syrup into the whites. Add the vanilla and continue whipping until stiff. Transfer to a pastry bag.

Chocolate glaze:
• 12 ounces semisweet chocolate
• 2 ounces cocoa butter or vegetable oil

Melt the 2 ingredients together in the top of a double boiler or a bowl set over barely simmering water.

My Notes:

For the cookies, like my Bakewell pastry, even after chilling overnight, the dough was definitely not of rolling consistency. I had to roll small portions into balls and flatten them onto the prepared cookie sheet. It still tasted great though.

I didn't have semisweet chocolate, so I used half regular chocolate and half unsweetened. I liked the marshmallows, they were really a great chewy texture and set beautifully. I just wish I had piped a little more on each cookie, but I kept it to a kiss as the recipe suggested.

To get to the soft ball stage when making the marshmallows, I used this link at Science of Candy as my guide.

I had to chill the cookies in the refrigerator after 2 hours of letting it rest outside because of the intense heat and humidity in Chennai, the chocolate was still very soft. It set up nicely in the refrigerator after about a 1/2 hour.

Now, onto my favorite, the Milanos!

Milan Cookies

Everything came out exactly as I remembered the Milanos. The cookies were fantastic. It's a keeper recipe. The only change I'm going to make next time is to reduce or omit the orange zest from the chocolate filling - it was just a little too intense for me.

Recipe courtesy Gale Gand, from Food Network website
Serves: about 3 dozen cookies

12 tablespoons (170grams/ 6 oz) unsalted butter, softened
2 1/2 cups (312.5 grams/ 11.02 oz) powdered sugar
7/8 cup egg whites (from about 6 eggs)
2 tablespoons vanilla extract
2 tablespoons lemon extract
1 1/2 cups (187.5grams/ 6.61 oz) all purpose flour
Cookie filling, recipe follows

Cookie filling:
1/2 cup heavy cream
8 ounces semisweet chocolate, chopped
1 orange, zested

In a mixer with paddle attachment cream the butter and the sugar. Add the egg whites gradually and then mix in the vanilla and lemon extracts. Add the flour and mix until just well mixed.

With a small (1/4-inch) plain tip, pipe 1-inch sections of batter onto a parchment-lined sheet pan, spacing them 2 inches apart as they spread. I used a Ziploc bag with the tip cut off, and hence the cookies were a bit uneven.

Bake in a preheated 350 degree oven for 10 minutes or until light golden brown around the edges. Let cool on the pan.

While waiting for the cookies to cool, in a small saucepan over medium flame, scald cream. Pour hot cream over chocolate in a bowl, whisk to melt chocolate, add zest and blend well. Set aside to cool (the mixture will thicken as it cools).

Spread a thin amount of the filling onto the flat side of a cookie while the filling is still soft and press the flat side of a second cookie on top. Repeat with the remainder of the cookies. Mine were all different shapes and sizes.

Gingerbread Cookies

My nephew came over yesterday all excited to make gingerbread cookies. He had his own recipe from a book, but that required a 2 hour wait for the dough in the refrigerator. I quickly checked online to find an easier recipe.

And came across one of the most lovely blogs I have seen. Exclusively Food, a blog by Amanda and Debbie, has great recipes and beautiful photographs. Their gingerbread people are incredibly cute, and thankfully my nephew loved them too.

So armed with their recipe, I had 3 kids making gingerbread cookies. They came out absolutely delicious! We didn't quite get to make people as I don't have great cookie cutters, but we made several different shapes. Our artistic talents were also slightly lacking. And most of the cookies were eaten before we could even get to the icing stage!

Gingerbread Cookies
(adapted from Exclusively Food)

2 1/2 cups All-Purpose Flour
140 g Butter, softened
1/2 cup Brown Sugar
1 large Egg, divided into yolk and white
1 tsp Cinnamon Powder
1 tsp Nutmeg Powder
3 tsp Ginger (I used ginger paste)
1 tsp Baking Soda
1/2 cup Golden Syrup

Stir together in a bowl, the flour, baking soda and spices.

In another large bowl, cream the butter and brown sugar together. Add the egg yolk and golden syrup and beat together until combined. Slowly add in the flour mixture until just combined.

Preheat oven to 180 deg C. And line a baking sheet with baking paper.

Divide the dough into halves. Roll out one half between two sheets of baking paper or parchment paper. Transfer to the freezer. Repeat for the other half. Let the dough freeze for about 15-20 minutes. This is essential - its really difficult to work with the soft dough before freezing.

Remove from the freezer and cut desired shapes. Transfer to the baking sheet carefully and bake for 10 minutes until firm. Let cool for 5 minutes and transfer to a wire rack.

While the cookies are baking, whisk together the icing:

Icing

1 1/3 cup Icing Sugar
1 Egg White (the one you saved from the yolk above)

Combine very well until a pale white. Add food coloring if you'd like. Decorate the cookies (I used Ziploc bags with a tiny bit of the edge cut off to pipe the icing onto the cookies) after they have cooled a bit from the oven. And let the icing set completely (of course, we didn't wait at all!).

They were fantastic. Thanks so much for a keeper recipe!!

Oatmeal Chocolate Raisin Cookies

And we get to Sweet and Simple Bakes to start the month on a great note. My favorite cookies in the world are oatmeal raisin and what better way than to add chocolate to it? They were, in short, fantastic! Do try this at home.

Oatmeal Chocolate Raisin Cookies

(recipe from Sweet and Simple Bakes - I changed it a little bit)

1/2 cup Butter, at room temperature
1/2 cup Caster Sugar
1/2 cup Soft Brown Sugar
1 Egg
2 tbsp Water
1 tsp Vanilla Extract
2 1/4 cups Rolled Oats (the recipe was for 9 oz or 1.12 cups, but I added more to get it to a dough consistency)
1 cup Self-Raising Flour (again, the original recipe called for 1/2 cup or 4 oz, and I had to add more)
1 tsp Salt
1/4 cup Chocolate Chips
1/4 cup Raisins

Preheat the oven to 180 deg C or 350 deg F.

Cream the butter. Add both sugars and beat until fluffy.
Add the egg, water and vanilla and beat well, until creamy. Now add the oats, flour and salt and beat on slow until blended. Fold in the chocolate chips and raisins until thoroughly combined.

At this point, I had a bit of a problem. You have to roll it into walnut-sized balls - but I couldn't roll it at all because it was really really sticky, which is why I added that extra flour and oatmeal that I mentioned above.

Okay, so now roll the dough into walnut sized balls. Keep them slightly apart on a greased baking sheet. Bake for 20 minutes or golden brown and slightly soft in the middle. Remove from oven, allow to cool slightly and place on a wire rack to cool completely.

Thanks again, Rosie and Maria for a winner recipe!

Savory Cookies

So on Day 2 of cooking from my bookmarked cookies recipe this week, I chose savory cookies from my friend Aparna's blog, My Diverse Kitchen. I've been lusting after these cookies ever since I saw it on her blog.

The taste was delicious and flaky - not spicy but with just a hint of cheese and pepper. You could add more if you'd like to bring some zing to it, but since I was making this with and for my daughter, I didn't go overboard with the spice. But this recipe is so versatile that you could any flavors that you'd like. The only thing I did different was omitting the egg - I was happy to use it but didn't have any and wasn't running to the store for one ingredient.

Savory Cookies
(original recipe from My Diverse Kitchen)

1 cup cold Butter
1 1/2 cups All-Purpose Flour
1/2 cup Cheese (I used fresh grated Parmesan)
1/2 tsp Baking Powder
1 1/2 tsp Pepper
1 tsp mixed dried Herbs (I used Herbes de Provence)
1-2 tbsp cold Water, or enough to bring the dough together

Preheat the oven to 190 deg C.

Rub the butter into the flour to resemble breadcrumbs. Add the cheese, baking powder, pepper and herbs and combine. Add enough water to bring the flour together to form a kneadable dough.

Roll the dough out and use your favorite cookie cutters to cut out shapes. Since my daughter got to choose, we made lots of stars, butterflies, moons, diamonds... basically anything she fancied!

Bake for 15-20 minutes or until browned slightly on the bottom and edges.

Cool completely on a wire rack.

This was a fantastic recipe, Aparna. Thank you so much!

Butter Cookies

I've given myself the name of Habitual Bookmarker. I bookmark so many recipes from other blogs and sites, that its getting a little out of control. If I made all the stuff I bookmarked, I'd be a happy camper, but they've accumulated and are threatening to hijack my computer if I don't start paying them some attention.

So here goes, the first of the many many that I've bookmarked in the Cookies category. These butter cookies are delicious and would be amazing with a cup of hot tea on a rainy Sunday afternoon. Elsye of Dari Dapur Saya is one of my favorite bloggers - she has lovely photographs with simple recipes that are always spot-on.

Butter Cookies
(recipe from Dari Dapur Saya)

1 cup Butter
1/2 cup Sugar
1 egg
1/2 tsp Vanilla Extract
2 1/2 cups All-Purpose Flour

Preheat the oven to 180 deg C.
Cream the butter. Add the sugar and continue to whip until fluffy. Add the egg and vanilla and continue to beat.
Fold in the flour. Cover and chill the dough for an hour and a half.
Take the dough out and roll it out. Cut into desired shapes. Bake for 10-12 minutes and cool completely on a wire rack.

Potato Chip Cookies

If you're looking for healthy and nutritious, I suggest you skip this post! But if you're looking for amazing flavor, read on.

Having a surplus of potato chips after a birthday party, I wanted to put them to good use and I remembered a cookie I had bookmarked from Baking Bites. These cookies have amazing crunch and a fantastic salty sweet flavor.

Potato Chip Cookies
(recipe from Baking Bites)

Makes about 40 thin cookies and about 25 thick, chewy ones.

2 cups All-Purpose Flour
1 tsp Baking Soda
1/4 tsp Salt
1/2 cup Butter, softened
1/2 cup Granulated Sugar + 1/2 cup Brown Sugar
1 large Egg
1 1/2 cups Potato Chips, crushed fine (I didn't crush them too much but I will next time)

Combine the dry ingredients (flour, salt, baking soda). In another bowl, cream the butter and sugar. Add the egg and whisk together very well.

Mix the butter mixture with the dry ingredients. Fold in the crushed potato chips.

Shape into balls (about the size of a small lemon). Drop the balls onto a baking sheet and flatten them out a bit. Bake for 12-15 minutes (12 minutes for chewy and more for crispy cookies). Cool completely on a wire rack.

Snickerdoodle

My daughter's current favorite book is "If you give a mouse a cookie..." by Laura Numeroff and Felicia Bond. It tells of all the unbelievable things that can happen if you give a mouse a cookie. And included in the book are the most delicious, kid-friendly recipes.

So my daughter and my niece spent the afternoon making these jumbo snickerdoodles, and they were scrumptious. I say were, because they were gone in about 20 minutes!

Snickerdoodles
(original recipe from Mouse Cookies & More)

I made changes to the original and I've italicized the changes

1 2/3 cups Flour
1/2 tsp Baking Soda
1/2 tsp Salt
1/2 tsp Nutmeg (I left this out)
1/2 cup softened Butter (I used 1/4 cup)
3/4 cup Sugar (I substituted brown sugar)
2 eggs
1 tsp Vanilla Extract
1/2 cup chopped Walnuts
1/2 cup Raisins
1 tbsp Cinnamon
1/4 cup Sugar (I ended up using only 1 tbsp)

Preheat oven to 180 deg. C.

Combine flour, baking soda, salt and nutmeg. Set aside.

In a bowl, mash butter and sugar together until well blended. Add eggs and vanilla, and mix until light and fluffy. Add the flour mixture, and stir until well combined. Stir in walnuts and raisins.

Mix cinnamon and sugar on a plate. Roll pieces of the dough into one-inch balls. Roll each ball in the cinnamon-sugar mixture, and place on a greased cookie sheet. Bake for 10-12 minutes.

Peanut Butter Cookies

These are the easiest cookies I've ever made. Or should I say my 2 year old daughter made them - yes, they were that easy!

Peanut Butter Cookies

1 cup Peanut Butter (chunky or creamy)
1 cup Sugar
1 egg
1/4 cup Chocolate Chips (optional - I didn't use it because I didn't have any at home, but I'm sure it'll taste great with some chocolate)

Preheat oven to 180 deg C.

Mix the peanut butter, sugar and egg together until it forms a batter. Fold in the chocolate chips, if using.

Form small balls (about 2" in diameter). Place them on a cookie sheet or baking tray. Flatten each of them slightly.

Bake for 8-10 minutes. Enjoy!

Doubly Delicious Chocolate Chip Cookies

Another lovely challenge from the Sweet and Simple Bakes team, Ultimate Double Chocolate Cookies. This was my first time baking cookies (yes! I'm a complete novice baker!), and this was just the thing to get me going in the cookie category.

I must first congratulate the S+SB team, Rosie and Maria, who are doing a fabulous job. I've gained a lot of confidence just from their fail-safe recipes and directions. Not to mention that my family thanks them too! (the 2 dozen cookies where gone in 2 hours, by 4 people! Crazy!).

The rule of thumb at home seems to be that the height of the cookies has to be equal to the height of the glass of milk! Nice, huh?

And this is my entry for Click: Cookies. I can't wait to see all the photos!

Ultimate Double Chocolate Cookies
(the recipe from here)

9 oz All-Purpose Flour
2 oz Cocoa Powder
1/2 tsp Baking Soda
6 oz Butter at room temperature
7 oz Demerara Sugar
4 oz Caster Sugar
1 1/2 tsp Vanilla essence
2 Eggs, lightly beaten
11 oz Chocolate Chips

Sift the flour, baking soda and cocoa together into a bowl.

In another bowl, add the butter and both sugars and mix well until creamy. Add the eggs (a little bit at a time), until well combined and then the vanilla. Beat until smooth and fully mixed in.

Add the flour mixture, a little bit at a time, and fold into the wet ingredients. Now add the chocolate chips until combined. Cover the bowl with cling wrap and set aside in the refrigerator for at least an hour, until chilled and firm.

Preheat oven to 180 deg C.

Roll the mixture into little balls (about the size of a ping pong ball) and place them on a greased baking sheet, leaving enough room for the cookies to expand while baking. Flatten slightly with your fingers.

Bake for approximately 10 minutes. They came out perfect! Let it cool for a few minutes on the baking tray and then transfer to a cooling rack until they are completely cool.

They were ... all gone in 2 hours!

Can't wait for next month and the next challenge! And here are some fun/ interesting cookie recipes - check them out!
