Every once in a while, I crave the honey roasted nuts found on the street carts in New York City. I remember every time you pass by one of these carts and the smell of the roasting nuts comes wafting by, making you want to stop, close your eyes and breathe it in. If you've never had them, I absolutely recommend them on your next visit there.
Meanwhile, you can try my New York street-cart-style roasted nuts. They came out pretty well, but the nice part was that my entire kitchen and home were left with that great smell! Mmm...
New York Style Roasted Almonds
(original recipe from World on a Plate)
2 cups almonds, blanched, skinned
1/2 tsp chilli powder
1/2 tsp cumin powder
1/2 tsp cinnamon powder
2 tbsp honey
1/2 cup brown sugar (I used Demerara sugar)
Salt and pepper, to taste
1 tbsp Oil
Preheat oven to 175 deg C.
Heat a pan with the oil, add the almonds, honey, chilli and cumin powders and sugar.
Stir to coat and continue roasting until the sugar melts and caramelizes.
Spread the almonds on a baking tray.
and pop into the oven for 5-10 minutes until browned and dry.
Take out the tray and let it cool.
Store in an airtight container (if there's any left after "tasting" it!)

I know exactly what almonds you are talking about as every time I go to NYC, I get the same ones! They are so wonderful, nice and warm. I loved how you put them in the roll of paper too!

I stayed away from the honey roasted months for a looonnng time. But I tried some fresh honey roasted pecans at a farm store and was hooked. The idea of cinnamon and honey on a roasted nut is a thing that needs to grow on you I think.

I changed it slightly because a friend of mine from El Salvador remembered the taste of peanuts and almonds from home.... I add in some lime, and a touch of hot sauce (to taste - nothing with vinegar in it- that would just kill the taste!) and she loves the way they turn out.
