Double Chocolate Chip Muffins

Or... Mud Muffins. They truly look like mounds of mud. But they are oh-so-delicious. And completely easy to put together. They are great to serve as dessert with ice cream when you need a quick fix.

And they don't have eggs, so you get to lick the spoon after mixing the batter!


Chocolate Muffins

(makes 6 muffins)

1 cup Flour
3/4 cup Sugar
scant 1/4 cup Cocoa
1/2 tsp Cinnamon Powder
3/4 tsp Baking Soda
1/4 tsp Salt
3/4 cup Buttermilk
1/8 cup Oil
1 tsp Vanilla
1 cup Chocolate Chips (or a mix of Chocolate Chips and Nuts to equal 1 cup)

Preheat oven to 200 deg C.

Combine all the dry ingredients (flour, sugar, cocoa, cinnamon, baking soda and salt). Add the buttermilk, oil and vanilla and stir till combined. Stir in the chocolate chips and/or nuts.

And you can taste the batter because there are NO EGGS!

Divide the batter equally (or as equally as possible) between greased muffin cups (if you're using a non-stick pan, you don't need to grease it).

Bake for 25-30 minutes.


Mmm. Delicious!

i like the look of mud muffins... tell me something u dont have any baking powder on that recipe, only baking soda...n it still works? i thot if u make eggles cakes/muffins( i hardly ever do so i dnt really know this stuff) u need to add both b.p. and soda...

Maybe it looks like mud, but its chocolate and definitely gets my vote.

No eggs (although I do like the texture that eggs lend to a product like this) and not too much fat either! Looks good.:)

Churning the Word Mill - Never noticed that. Yes, it has only baking soda and it turned out fine. I don't know much about baking to know why it doesn't have bak.powder? hmm - wonder what baking powder is meant for in a recipe! will get back to you!

dont go crazy trying to answer my Q... its just that the few eggless recipies i have mention both bp and soda... so i have always assumed both are needed....but if it works just as well with one, thats good too..:D

That looks fabulous Arundathi. Baking powder is a combination of an acid and alkali (mostly baking soda) which makes the baked goods to rise. Was this recipe eggless originally? If yes, since it has buttermilk already (which is an acidic ingredient) that along with baking soda does the job of baking powder. This is my opinion and I also don't know much about the science behind baking.

tried these uber delicious muffins, they came out great!!!!
i used only 1/2 cup sugar and used 2 tbsp of Molases, it came out great!!! Loved that Licking part!!!! :) thanks for sharing!!!
