Samosas are my primary love. I can have them any day of the week at all times of the day. Needless to say, this isn't possible - it's not the most healthy snack - especially when it's fried. But these aren't - or atleast they don't have to be.
This recipe was passed onto my mom by her college roommate, and is definitely an old, traditional Gujarati recipe.
Samosas
For the Shell:
2 cups All-Purpose Flour
1/4 cup melted butter
For the Filling:
1.5 cups boiled Potatoes, peeled and cut into small pieces
1/2 cup Peas, cooked
2 tbsp Amchur powder (dried mango powder) or Chaat Masala
2 tsp Chilli powder
1 tsp Garam Masala
Salt, to taste
Roast & Grind:
1/4 cup Fennel Seeds
1/4 cup Coriander Seeds
4-5 dried Red Chillies
3-4 Curry Leaves
Mix flour and butter and a little water to make a soft pliable dough. Take small amounts and roll out into circles, cut into halves and keep aside.
Mix together all the filling ingredients.
Scoop a heaped tablespoon of the filling into the center of each semi-circle. Fold the ends over as in the pictures.
Bake @ 350 deg F for 25-30 mts.
I had some extra filling and dough, and wanted to try something I'd seen a long time ago here. I shaped the rolled dough into a muffin pan. Then added the filling into the cups and baked for about 20 minutes.
These would be perfect as appetizers! And you can experiment with the filling. The dough is a winner!

You are on a major blog roll!
I have the afternoon munchies, and that pic just made me ravenous.
I make somthing similar using frozen puff pastry sheets/shells.
Looks good!
These really look good...and more healthy than the fried stuff...will surely try out...samosas are my weakness.
I made gujiyas this way for Holi instead of deep frying, and was surprised that they tasted better than the deep fried ones! Love your passion for trying out different things - and this one has turned out really well - Who can say no to samosas?

Simply gorgeous! Samosas are one of my most favourite snacks but I never learned to make them. Thanks for the detailed instructions.
Arundathi-
The samosa making process looks so yummy and am sure the samosas will be as tasty. I am too lazy to start from the scratch and am happy with the frozen samosas that we get here in the Indian stores.
Bhags - can't wait to see yours! :)
Dragon - You're very welcome. Do try it!
Mitr_bayarea - Do try it - its not that complicated! And it'll taste better than the store-bought ones! :)

Hi there! Thank you for stopping by earlier. I read your comment about the cheese stuffed bread: in that post I write that I used AP flour instead of bread and everything turned out great. Good luck.

Hi Arundhati,
So glad to be your T&C partner this month! I'm so torn between samosas and your pizza recipe. I really love samosas and that's one of the things I miss most (from Malaysia. I like that it's baked too. I'm not a fan of fried stuff. Clogs the arteries way to much. :)
Thanks for dropping by Happee Monkee.
Cheers,
Mable

Monkee - Yes, I'm not a Frier either! :) only fried once and didnt enjoy it. Love your blog and looking fwd to seeing what you cook up from mine! :)
Hi - just found your blog and can't figure out what to make first (everything sounds great). Wondering abt this though - i always thought my mom used atta to make samose (should have paid more attention) - are you recommending regular flour because it works better or b/c its easier to find?
Thanks!!
mo
Maurice - Thanks for stopping by. I think samosas are traditionally made with a mixture of maida and atta. I used flour only because it was easier to work with. Hope that helps.
This is what I am making! I had to improvise a little on the filling. Don't have the mango powder and not sure what it is? Almost died when I thought I had no peas, but found a pea and carrot mix in my freezer! lol. I had these for the first time at an Indian place nearby (which has since closed) and I truely loved them! One of the Indian students made me a tomato chutney that I plan to eat with my samosa when I get it made!
I ended up doing the tarts, rolling and shaping was going to be too much for my arms....They are almost done and I can't wait because I actually am dying to eat one! Thank you for inspiring me to finally make this dish!
HoneyB - they look amazing - you've done a great job! Glad you liked it and I hope you feel better soon.
Oh wow I love the idea of the cupcake tins! How easy and how yummy!
Laura - thanks for stopping by. And thanks for the comment. I love your blog!
I also make baked samosas, but I take it one step further and use wholemeal flour. Then I feel positively healthy when I snack on them! You can see pictures on my blog if you are interested: http://mangosoup.blogspot.com/2009/08/baked-wholemeal-samosas.html
@ Jenni Maisingh - Thats a great idea. Thanks.
Hi! I made your baked samosa recipe. It was really good! :) I tend to bake vs. fry any chance I can. So I was happy to see your recipe.
hey ! chanced upon ur blog while lookign for baked samosas.. the fillign looks yummy ! and any tried-and-tested gujarati snack should be a winner :) am waiting to try this out. thanks for posting the same ! just a question : when u say bake in an oven, does it mean the normal 'bake' settings as for cake? also, does the oven require pre heating ?? would greatly appreaciate if u could just drop in a line back to me at: srinath.kalyani@gmail.com...
thx, and cheers :)
@ Didan - so glad you made it and glad you liked it. :) I tried finding it on your blog, but couldn't. Love your blog btw! Subscribed!
@ Kalyani - Yes, do bake under bake setting. Yes, always preheat an oven to ensure that the heat is consistent while baking. Good Luck!
Hi! Made this yesterday - came out way better than fried samosa! Thanks so much for sharing :)
- Padmaja
Another thumbs-up here! I've been wishing for a good baked samosa recipe and yours came out great. Mine took a little bit longer in the oven but it was worth the wait! Thank you.
Hi Arundathi,
I was looking for a recipe for baked samosas to make for a New Year's Eve party and stumbled upon yours :) I'm not used to working with dried chillies, so my question is, how do I prepare them to mix into the filling? Also, how many samosas does this recipe make? I want to make sure that I have enough ingredients to feed my guests.
Thanks!
- Cathy
