Omelets


Who doesn't love omelets? I love masala omelets with lots of spice and veggies stir fried and folded into the center.

I've learnt that the perfect omelet is from beating the eggs for just a few minutes - just blended. I've also found that egg whites are easier to work with than the whole egg. And I absolutely have to eat my omelet with ketchup (i know - that just doesn't work for some people!). How do you like your omelets?

I like them real fluffy... so I beat the whites separately and then add the yolks at the end. :-) I love to eat it as a sandwich within 2 slices of buttered toast :-)

Try adding a tea spoon of milk to the eggs while beating them. I've found they come out more fluffy. Especially for scrambled. Also found that there is a big difference in the end product when using a fork to blend as most of us do, and using a proper blender. Blender comes out much nicer.

kanwar - yup - i do add the milk and it does get more fluffy, but i'm guilty of using a fork. should use the beater from now on!... thanks.
